This unit describes the performance outcomes, skills and knowledge required to use personal hygiene practices to prevent contamination of food that might cause food-borne illnesses. It requires the ability to follow predetermined organisational procedures and to identify and control food hazards.
The unit applies to all organisations with permanent or temporary kitchen premises or smaller food preparation or bar areas.
This includes restaurants, cafes, clubs, hotels, and bars; tour operators; attractions; function, event, exhibition and conference catering; educational institutions; aged care facilities; correctional centres; hospitals; defence forces; cafeterias, kiosks, canteens and fast food outlets; residential catering; in-flight and other transport catering.

When will I receive my Level 2?
When your assessments have been marked as competent by one of our assessors, and you have successfully completed your Level 2 online training, you will be issued with your nationally recognised Statement of Attainment via email.
Who can sign off my supervisor report?
Your Supervisor Report must be completed by someone in the food industry—current or past (within 12 months) colleagues or volunteer supervisors. They must observe you performing all tasks listed in the report on three separate occasions for your practical assessment.
Not working in the food industry?
Don’t stress, our food safety courses can be completed by anyone regardless of prior experience.
What about my practical assessment?
If you're new to the industry, several options exist for completing your practical assessment. A past manager, co-worker, or a friend/family member in the food industry (12+ months experience) can sign off. Volunteering at food-based charities is another option. The assessor must observe you three times.
How long will my course take to complete?
Please allow approximately nine to ten hours to complete your training course.
How long are my Food Safety Supervisor certificates valid for?
Food Safety Supervisor certificates do not have an expiry date, however, it is recommended to renew these certificates every three years. Some local councils require these certificates to be renewed every three years
